About Ramen Bushi-Do

Ramen Bushi-Do keeps its menu simple but its flavors complex. Chef Nancy Xia, who made her name at dumpling restaurant Dough Zone, spent more than two years studying ramen under the guidance of an expert chef before opening Ramen Bushi-Do. Her efforts are reflected in the restaurant's signature miso ramen, which meticulously mixes five types of cooked miso, and in the chicken and pork broths, which are made fresh daily and cooked to perfection for eight hours.

I wish I could offer guidance to more of the menu, but each visit I have to order the Tonkatsu Ramen. In their long-simmered broth this dish is insane. Friends have ordered and been happy with several other dishes, and the starters we've tried have been fine, but for me the Tonkatsu is the absolute star. Go order some now. (The service is friendly, too; but I'd go if terrible anyway for Tonkatsu)
