This St. Louis–based business blends three great American and Italian traditions: blues, food trucks, and crispy pizza. Easily found on a daily basis thanks to an online calendar that keeps track of its schedule, the pizzeria's food truck contains a custom-built wood-fired brick oven that reaches up to 800°F. Once the staff slips each doughy round inside the belly of this fiery beast, it takes only two to three minutes to turn the ingredients into a crispy yet chewy, slightly charred pie. And with a newer brick-and-mortar drive-thru location purveying these 8" pizzas as well, this blues-inspired business can now reach more mouths than ever before.
