Greg Christmas discovered the joys of distilling while living in the hills of East Tennessee many years ago. Now with more than 25 years of distilling under his belt (not to mention a seven-year stint brewing for Dogfish Head), he shares his creations with the world through Beach Time Distilling. There, he and his staff use a 250-liter Polish-made still to distill gin, spiced rum, and vodka using an all-natural fermentation process.
