Though husband-and-wife team Ariel Rodriguez and Fabiana Pavese founded Pasta Del Giorno, the restaurant’s true origins stretch back generations to Fabiana’s grandmother. She passed her homemade pasta recipes to Fabiana’s uncle, Tio, who passed them in turn to his niece. Thanks to her grandmother’s influence, Fabiana artistically crafts everything from pear and gorgonzola tortellini to slow-cooked risotto topped with mahi mahi inside the cozy restaurant. The eatery even has its own pizza chef, whose hand-tossed crust supplies a doughy foundation for delectable toppings. But the real signature dish may be Tio's meat lasagna, whose layers of ricotta and tomato sauce are topped with mozzarella, shaved parmesan, béchamel, and a drizzle of olive oil. Such feasts unfold amid hues of olive green and brick red—recalling the Italian flag—as well as live music every Friday night.
