Since 1986, Gatten Sushi and its staff have been determined to provide guests with authentic sushi, served in its classic "kaiten" style, brought to guests tables by a conveyor belt. The process itself is simple: the chefs in the back stay busy preparing fresh pieces of sushi and sashimi and send them out on the conveyor belt. Guests grab whatever plates look appetizing, and the staff tally the price based on the number and type (different plates are worth different amounts) at the end.

The result is a diverse and random lineup of sushi options. Albacore nigrini could be followed shortly by a spicy tuna roll, or a California hand roll. For those who know exactly what they want, Gatten Sushi allows guests to order full-sized rolls ranging from the staff favorite dragon roll to California tempura roll—a deep-fried cousin of the classic sushi roll.
