Jimmy and Terri Taite, the owners of Gumbo’s, have had a longtime passion for preparing quality meals for others. For Terri, this passion goes back all the way to her mamaw from whom she inherited three things: a love of cooking, safecracking tools, and generations of creole recipes. Five days a week, their dining room fills with the zesty aromas of New Orleans–style dishes such as shrimp or catfish po boys, homemade bread pudding, and classic creole gumbo, teeming with spicy hunks of andouille sausage, chicken, and shrimp.
