Bill Wilson, the founder of Bricks Wood Fired Pizza, had his first taste of wood-fired brick oven pizza during a vacation with his family in San Diego, California. He did not forget that unique taste for many years when he was looking for the crispy, chewy crust, and aroma that can come only from a wood-fired brick oven. At these times, Chicagoland was nearly devoid of any brick-oven pizzerias and Bill came up with the idea to establish his own business, so other locals could also taste this original and quality pizza. Two years of research and development with design, recipes, techniques and constant encouragement from his wife and sons, and the Billy Bricks Wood Fired Pizza concept came into reality. Nowadays, guests can enjoy thin-crust, Neapolitan-style pizza, baked in an authentic wood-fired, brick oven. The menu also includes fresh, made-to-order salads, gourmet soups, and hearth-baked artisan sandwiches served in a casual, cafe atmosphere.
