Despite the miles that lie between One Thong Chai and Southeast Asia, the eatery provides visitors with a genuine Thai experience. Soft lights, warm colors, and golden depictions of Buddha decorate the space, whereas curries, stir-fries, and noodle dishes—all rich in aromatic spices—fill the menu. Although the chef prides herself on re-creating the flavors of Thailand in her offerings, she's not averse to incorporating local culture into her cooking. For example, she puts a twist on traditional crab rangoon with New England's favorite local shellfish, lobster.
