The homey diner's new lunch and dinner plates pair classic entrees with equally delicious sides; depending on the day, diners might sup on chicken and dumplings, salmon patties, meatloaf, or lasagna. No matter the order, guests can complete their country-style meals with sides including green beans, corn, and mashed potatoes.

In addition to the new arrivals, Copeland's still sports its popular menu of hearty subs, reubens, and chicken sandwiches. An extensive hot dog menu, with dogs chosen among the top five in East Tennessee, treats hungry patrons to sausages covered in southern-style chili and sautéed onions, or dogs prepared in the traditional Chicago style: with Vienna Beef franks run through a garden of relish, mustard, pickles, and tomatoes, all tucked into a tiny winter coat.
