Teacher was great and loved the class

This was our second class and we had a great time. The food was generally delicious and the chef was very skilled, friendly and entertaining. The reason for knocking off one star is that, despite the group paying close to $1,000 in total for the evening, they had to substitute a couple of ingredients because somebody messed up in shopping that day. Seems one of the assistants could have run to the store. Also the vent system was not working right; they should get that working for all the cooking activity that happens in a snug area. The main beef course was very nice, but was cooked only medium rare, so not everyone ate all of it, being under-cooked for our taste. Why not cook some to at least medium?
