The truck's cooks specialize in po' boys, whose toasted baguettes accommodate fixings such as the Bayou Classic's seasoned shrimp and aged pepper aioli. The vegetarian-friendly Combination takes a shrimp-free approach with a medley of grilled onions, roasted corn, red bell pepper, and pickles.
Each sandwich arrives with a drink or side, which includes potato chips sprinkled with parmesan cheese and herbs or onion rings thinly sliced to replicate the tears shed by the forlorn cooks who cut them.
