Tristan and Mike may have started out in different hemispheres—Australia and the United States—but their 25 years of collective coffee experience should have their café, Fillmore Coffee Co., firmly planted in Phoenix for the foreseeable future. The contemporary coffee shop is located on the ground floor of Skyline Loft Apartments, about equidistant from the downtown campuses of Arizona State and the University of Arizona. Its baristas sling gourmet coffee drinks made from locally roasted beans, including single-origin pour-overs. They also serve up fresh fruit smoothies, protein shakes, and meals made from local organic ingredients.
