Customers who pop into the restaurant or flag down the food truck with a flare build their own traditional or gluten-free pasta creations. They start by choosing a box for dine-in or take-away and fill it with their choice of noodle, including capellini or spiral pasta, and then top the pasta with such sauces as traditional marinara or spicy arrabbiata. Patrons can also build their own salads and wraps.
