Townshend's Distillery, Portland

Growing out of Oregon's Townshend's Tea Company, Thomas & Sons is the first distillery in the country (and maybe the world) to make spirits out of tea. Their unique process is crafted 100% in-house from leaf to bottle, and naturally gluten free. Head distiller Seth O'Malley focuses on Pacific Northwest ingredients to bring a line of liqueurs and botanical spirits that visitors can sample in the tasting room. Here's a look at some of Thomas & Sons' offerings:

• Townshend's No. 2 Sweet Tea spirit: A distilled spirit crafted in-house, leaf to bottle, from our Single Estate Ceylon black tea and cane sugar. (70 proof)
• Bluebird Alpine Liqueur: A host of aromatic herbs and spices like angelica and fennel combine in this layered and gently sweet liqueur. (76 proof)
• Townshend's Pacific Northwest Fernet: Local ingredients including Douglas fir, Willamette hops, and birch bark are paired with 30+ botanicals to create a new take on an old world-style digestif (80 proof)
