Eleanor Bradley has eaten a lot of gluten-free cookies. And she's been disappointed by a lot of gluten-free cookies.
So she started experimenting in her own kitchen. "There has to be a way to make a gluten-free cookie taste like a, well, cookie," she thought, whisking butter and sugar in endless mixing bowls. It wasn't easy. "The results? They were . . . varied. At least at first. But after much alchemy," Eleanor says, "it finally came: the perfect chocolate chip cookie. It looked like a chocolate chip cookie. It tasted like a chocolate chip cookie. But, perhaps most importantly, it felt like a chocolate chip cookie."
Today, Bradley Bake Shop treats take myriad forms: orange cranberry bars, peanut butter marshmallow cookies, sea salt brownies, and much more. Characterized by warm flavors, sumptuous textures, and a moist crumb, each dessert offers world-class snack satisfaction, and eaters don't miss the gluten at all.
