And Blue Star's atmosphere is just about as traditional as its food. Wood-paneled walls bear black-and-white photographs, a framed image of the Texas flag, and vintage newspaper clippings, creating a casual, rustic vibe that's reinforced by small accent pieces such as a weathered copper kettle and a snow globe filled with Texas oil.

We were at the restaurant for 15 minutes before being welcomed, 10 more before orders taken, 10 more to get our drinks, then 35 to get the first meal. The 3 meals came out separated by 20 minutes. And we ordered burgers! Terrible service.

If you have a new customer that arrives 20 minutes before closing, you should serve them even if it means you go home later. Then you might actually get people to come back.
