Alongside the typical curries and kebabs at Tarka Indian Kitchen, you'll find something a bit more unexpected: the naanini. This inventive dish puts an Indian twist on the classic Italian panini, and the result is something that looks like a taco but is distinctly American in its melting-pot approach.
Each made-to-order sandwich begins when a piece of Indian-style flatbread, or naan, emerges from the clay tandoori oven. Chefs toast the naan a bit more than usual so that it can withstand being filled and folded without falling apart. Then they mix sautéed veggies and spices with a choice of seasoned lamb, curried chicken, or aloo—a vegetarian blend of potatoes and cauliflower. When the filling is finished, it gets heaped inside the warm naan bread. A side of masala-dusted fries accompanies the sandwich, capping off this Indian take on fast food.
