We are vegetarian, so Mexican restaurants are a gamble. The food is good, but Caballo Blanco is very traditional and uses lard to fry the flour (not corn) tortilla chips. There is a lot of lard in various dishes that involve frying (chile rellenos, enchiladas, crisp tortillas, etc.). The rice used chicken stock. They did have whole beans that are water based. I would go back with a non-vegetarian that wanted traditional, pre heart healthy Mexican food. This is a rare find....
