You seem to be living on your 100 year reputation..Food and menu should be more Italian and up dated. Take advantage of your history and phisically give your guest a tour..explain the wine tasting area. Put your prices at a realistic figure.

I would recommend using less bell peppers and go thicker on the white sauce. The peppers over power the entire pasta and sauce.
