Some might call Sun Flour Baking Company at Plum Cafe's founder, Rey Ortega, an idealist. He discovered vegan diets when, almost 20 years ago, he decided he had to do something about his chronic food allergies. His personal choice became his passion, with his vegan and vegetarian bakers and staff producing a wide variety of vegan, gluten-free, and wheat-free baked treats. Rey's ovens churn out dozens of different flavors of cookies, from java and chocolate chip to lemon, and his golden brownie eschews both wheat and gluten for pinto- and rice-based flours. To keep things fresh, the selection of cookies and brownies rotates daily, like tires with the same diameter as Mars. The online store Rey maintains also packages his best sellers for sale around the nation. In his quest to further the vegan cause, he even wrote and published a children's book called The Organic Adventure of Tucker the Tomato, which chronicles the journey of an organic tomato.
