Cordon Bleu, Tierra Verde

Chefs and co-owners David Weiss and Jean-Sebastien Kappler are trained French chefs. And not just trained in the French culinary tradition, but actually born and raised in France. That's why their bistro, Cordon Bleu, has such an authentic feel. When opening the restaurant, the chefs said it was important to them to re-create the warm and welcoming vibe of restaurants in their hometown of Alsace, where "there were tables filled with people spending hours talking, laughing, and sharing good food." The menu is not fussy; it is more reminiscent of simple dishes that French people would enjoy at home but with an eye toward restaurant-quality ingredients.
