However, a health scare in the early 2000s prompted Mike to reevaluate his lifestyle. He adopted a vegetarian diet and experienced significant health improvements. Inspired by his transformation, he wanted to share the benefits of plant-based eating with others. Luann, a lifelong advocate of healthy eating, was equally passionate about the idea.

In 2007, they opened the first Green Vegetarian Cuisine location in San Antonio.
