Adria Shimada first embraced a farm-to-table ethos while working at a farmstead inn near Toulouse, France, where she felt the culture valued artisanal producers. In her Seattle ice cream atelier, French for "an artist's workshop," every product is made from scratch on-site in the airy, light-filled kitchen visible behind the counter. Parfait churns out tubs of small-batch, custard-based frozen treats made with eggs laid by Wilcox Farms cage-free hens, milk from Fresh Breeze Organic Dairy, and organic fair-trade cane sugar. Parfait also offers elegant ice cream novelties and desserts for any season, including French macaron ice cream sandwiches, s’more ice cream pies, seven-layer ice cream cakes, profiteroles with warm housemade chocolate sauce, and brownie ice cream sandwiches in a variety of rotating flavors.

I think the prices are too high for what you get. I also found the crust on the coconut ice cream pie disappointing. It would be better with a graham cracker or similar type crust.

The macaroon ice cream sandwiches are worth traveling for. I especially loved the honey lavender and lemon pistachio flavors.

For the price I found the taste and flavor combinations lackluster. I thought the rosemary would unusual and amazing, but instead there was an unpleasant mikly taste. I can easily go to the store and something comparable. See about Scoops in LA!!
