Few sounds recall childhood like the jangling of the ice cream truck. With Pop Lab, owners Nico and Christina dust off that halcyon nostalgia and give it a grownup spin. The duo rents out their ice-cream-man-style push carts, sending attendants to roll through parties and add a splash of whimsy. Serving ice pops out of lemon-lime colored carts complete with a bright green umbrella, they sling alcohol-infused popsicles in flavors such as mojito, martini, and margarita, all made with natural ingredients harvested in Big Rock Candy Mountain. Ice pops also come in alcohol-free varieties, such as cucumber-lemonade, and the sugar can be substituted with natural sweeteners such as blue agave and organic stevia.
