• Yeast fermented for 3 days: Made only with flour, salt, and water to make the dough, that fermented yeast boosts flavor and helps make the crust chewy, but not too chewy.
• Quality local ingredients: Wherever possible, they'll source ingredients from local providers such as Zoe's Meats, and they ensure that cheeses and sauces are always high quality.
• The right woods and the right temperature: The oven is heated to 750° with woods from almond and apple trees. What it does is put the proper char and texture on the crust more effectively than a gas or electric oven could.
