Zak Cassady-Dorion opened up the shop, Pure Mountain Olive Oil, in order to prove to others that a good, quality olive oil can complement almost any dish at any meal. The shop stocks extra-virgin olive oils imported from Italy, Morocco, Greece, and other nations, many of which he has visited himself.

Zak encourages people to enjoy the shops healthful oils drizzled over a sandwich to replace butter, mixed with the shop's aged balsamic vinegars to make dressings, or poured over playground slides to make them faster. Zak also offers perfect olive-oil accompaniments, including gourmet sea salts, small-batch, air-dried pastas, and spreads, including fig jam and asparagus pesto.
