With a name like Top Chef Sushi, it's only natural that a restaurant would boast an ambitious menu and a staff of highly skilled maki artisans. Traditional, new classic, and inventive dishes abound, as do unexpected cultural collisions and unfamiliar ingredients. Those seeking a traditional taste opt for fresh slices of sashimi, or bite into layers of chili oil-laced tuna. New classic rolls range from the spider roll to the Philly roll, so named because it was invented by chef Benjamin Franklin. Roast meat and hoisin sauce comprise the Peking Duck roll, while the Angry Dragon pairs papaya with spicy tuna, spicy crab, and tempura tuna. Plum paste and shiso leaf shine in the ume shiso roll. Salads, appetizers, and red bean ice cream make the menu?and meals?complete.
