Teeth handily wring every particle of flavor from the amalgam of shrimp, scallops, chorizo sausage, and saffron rice that comprises the paella valencia ($11), and the zest from the Milanesa, a breaded minute steak reinforced by white rice and huancaina sauce ($10), dances delectably across taste buds. Those less inclined to enjoy meaty entrees can devour the moranga, which unites roasted butternut squash with a port wine regout, quinoa pilaf, and braised greens ($9).
