Starters from chef Frank Mnuk's menu of contemporary French-American cuisine take center stage on the eatery's white linen tablecloths: puff pastry envelops braised Bourgogne snails and garlic butter to become escargot Francois ($14), and celery root foam joins golden raisin jus to collage a plate of scallops and sweet blue prawns ($18). For the main course, foie gras ($18) can be chosen to accompany a lean, tender cut of filet mignon ($40), and fennel salad can chaperone duck a l'orange ($36) to the table. Freshly squeezed lime juice refreshes a Cofresi made with basil-infused vodka and spiced rum ($14), one of the signature cocktails that rain into glasses from the high-altitude restaurant's menagerie of tame clouds.
