One of Chicago's premier fine-dining establishments, Custom House has been lauded in the pages of Esquire magazine for its simple, seasonal approach to modern American cuisine. Put your taste buds in the expert hands of the Custom House kitchen staff, with a four-course meal chosen by the chef. The chef's tasting menu changes daily, and includes a first course, fish course, meat course, and dessert. This summer, starters might include beef carpaccio with arugula, lemon vinaigrette, and grain mustard aioli (normally $12), while main courses could be dishes such as sautéed walleye (normally $26 as an entree) or Colorado rack of lamb (normally $32 as an entree). Vegetarian options are also available.
When summer's end comes, leaving only memories of snake bites and run-ins with hostile bands of circus performers, Custom House will turn a new page on its seasonal menu. This year promises an exciting change, with the arrival of new Executive Chef Perry Hendrix. Mr. Hendrix comes to Custom House from St. Louis, where he is executive chef at Brasserie by Niche, lauded for its "simply good food" in the local press. He'll bring new seasonal fare to the Custom House menu; look for smoked trout rilletes with cucumber and crème fraiche, and roasted beets with Greek yogurt, lamb's lettuce, and candied bacon.
While Custom House awaits Mr. Hendrix's arrival, its kitchen is in the able hands of Eric Aubriot, known to Chicagoans as a James Beard Foundation Rising Star Chef nominee and the former executive chef at Aubriot and Tournesol. Mr. Aubriot will hand over the kitchen and the keys to Custom House's company U-boat to Mr. Hendrix on September 1.
