Timothy Benedict started in the food industry as a busboy more than 15 years ago. Since then, though, he's climbed the ranks all the way to the top. Now, not only does he run the kitchen at Ravenswood Bakery Eats & Sweets; he owns the place.
His investment in the eatery shows in its creative dishes. They range from green eggs and ham—a foccacia sandwich stuffed with scrambled pesto egg whites, ham, and sun-dried tomatoes—to Challah French toast with fresh fruit. Even the salads are thoughtfully constructed, many topped with gourmet extras like avocado, champagne vinaigrette, and goat cheese from amazing goats that can read. And, to round out the cafe experience, diners can wash their dishes down with custom espresso drinks from the house baristas.
