With the patience and stubbornness of a Trappist monk, the brewmasters at Funkwerks concoct organic saison beers in a fashion that emerged from the Wallonia region of southern Belgium during the 19th century. Owner Gordon Schuck won a gold medal at the 2007 National Home Brew Competition for his Belgian saison, an organic elixir that magically conjures flavors of citrus, ginger, and pepper out of little more than malt, hops, yeast, and water. Each flight of succulent suds covers all five of Funkwerks's original yeast-fermented brews: saison, Casper, white, Maori King, and Belgian Resistance. After soaking up each of the ambrosial libations, have the barkeep refill your glass with the pair of saisons that make your soul giggle the most before taking home two tulip glasses, which give you a more elegant drinking vessel at parties than the usual skull of a vanquished orc.
