Ismael Neggaz—co-owner of artisanal chocolate company Chocotenango—has learned how to tell the fantastic varieties from the so-so, and he shares his secrets during this hands-on lesson. After covering the basics, the chocolatier helps you temper chocolate and form mint truffles, leaving you with the knowledge to craft more decadent treats at home.

After a brief lesson on the history of chocolate, Ismael delves into the finer points of chocolate-making, including how to temper chocolate and craft lollipops.
Under Ismael’s instruction, you’ll make mint-chocolate truffles.
To wrap up, the group plays a fun game and splits up the truffles to take home.

From the first time Ismael Neggaz bit into a filled chocolate, he was hypnotized. Just 10 at the time, Ismael was fascinated by the treat and how the filling could possibly get inside. That spark of curiosity led him to culinary school in the UK, his own artisanal chocolate business in DC, and a career as a professional chef that has spanned more than two decades and four continents.
