Born in Cuba, Hector grappled his way up America’s greasy chain of culinary command before settling in as benevolent overseer of his namesake restaurant, which boasts a menu full of fresh, exciting American cuisine. Like the color of a hallucinating chameleon, the menu changes every so often to keep adventurous eaters guessing, but a variety of current small plates serve well as shared appetizers or as bargaining chips in a tense but friendly dinner fare-trade session. Try the avocado for a cross-culinary synthesis of lobster, Wisconsin cheese, and cilantro cream ($13.50) or drop lamb-chop lollipops into Texas chimichurri sauce to taste a more savory version of the classic sticked candy ($16).
