Creating a meal from scratch is both challenging and delicious, much like playing "Stairway to Heaven" on a clarinet made out of a candy cane. Master meal melding with today's Groupon: for $45, you get one sushi-making class at Kyoko Japanese Restaurant in Fayetteville (an $89 value). Classes are offered weekly between October 15 and November 19, from 12 p.m. to 2 p.m.
Kyoko chef Yusuke Honda and John Pettigrass pass the knife of learning to sushi novices, who gain experience bundling fresh fish into their own nigiri and maki rolls. Instructors begin by immersing apprentices in the history and geopolitical ontology of the delicacy, then give a full overview of ingredients and demonstration of techniques necessary to craft sushi rice and swaddle it in the nori (seaweed wrap). Students become masters of wooden spoon, bowl, and sushi knife before rocking their rolls with provided ginger, wasabi, soy sauce, and vinegar. Once they have snowballed their creations to edible size, fomenters may devour their creations with chopsticks, or pool cues for overly snowballed rolls.
