For their main dish, customers can contrast the cool blue-and-purple lighting of Saffron’s dining area with the simmering spices in lamb vindaloo, which chefs marinate in spicy gravy with pickled onions and potatoes, or chow down on murg chilli masala stocked with green chili and tender morsels of chicken. Alternatively, vegetarian patrons can bury meat-free pirate treasure beneath forkfuls of vegetable dum biriyani, cooked over low heat and flavored with Saffron’s titular spice.
