SoLita Delray’s recipes draw on a palette of handpicked ingredients to meld the culinary traditions of Italy and America. Duos practice choreographed fork-spearing routines on starters such as house-made meatballs with streams of freshly made, basil-infused tomato sauce and creamy hillocks of ricotta cheese. Servers usher steaming plates of snapper angela to tables with a posse of peppers, red onions, and clams soaked in white-wine tomato broth like a bib-testing dummy. A bone-in veal chop milanese serenades palates, and pillowy gnocchi twirls gleefully among cheering crowds of chicken, mushrooms, spinach, and roasted pepper as an alabaster curtain of parmesan-cream sauce falls smoothly over the entire spectacle. As contented sighs signal the end of the feast, tiramisu gives tenderly beneath forks, revealing coffee-steeped sweetness powdered with cocoa.
