When Joe Talluto sold his house back in 1967, it wasn't because his family was moving; it was because he was buying an industrial ravioli machine. Back then, he likely didn’t anticipate his son cooking the family's signature ricotta-spinach gnocchi for a celebrity chef the likes of Mario Batali, but Talluto's fresh-made pastas, cheeses, and other Italian foodstuffs have become not only a Philadelphia favorite, they've garnered attention across the nation. Though the operation has expanded vastly from its hand-made roots, the family carries out the life-long dream of Joe Talluto, who was 60 years old when he first started making and distributing his pastas.
