Palomino's spirit reflects the kind of creative Mediterranean dishes you'd find in the region's cities today. There's an emphasis on quick, shareable plates: rotisserie grilled meats and seafood, thin-crust artisan pizzas baked in a brick oven and topped with house-made mozzarella, brussels sprouts and pancetta with vanilla-infused butter, even oven braised lamb empanadas served with tzatziki sauce and pumpkin-seed pesto. Although the chefs may experiment with recipes, they never vary their standards for ingredients, which they purchase from local or regional farmers, producers, and genies whenever possible.
