I think that truly successful eating establishments are the ones that pick a cuisine, focus on it, and perfect it. The problem with Mexican Post/Only Felafel, is that the "Mexican" is really weak and the felafel is only okay. If you picked just one of those cuisines and improved upon it, made it special/unique, you would be more likely to succeed.
