the service was EXCELLENT the chicken apple sausage was soggy and bland (were they boiled before they were grilled to assure they got cooked through?)

Service was awful. Long wait to be seated. Apparently servers are not authorized to seat customers, so they ignored me and another couple. But the service from the actual servers, once seated, was awful as well. I had purposefully waited until after the noon time rush. I counted five servers plus a bus boy and the host and about ten occupied tables. That is not a lot of tables per server. Yet, I had a long wait to order. When the omelet arrived it was only warm, not hot. I contemplated asking them to take it back and stick it in the microwave, but no waiter came back to check to see 'how things were going.' Try as I might I could not make eye contact with the server who took my order, so I just plodded ahead. A different server had delivered my order and I asked him for a refill on my coffee; he said "sure" but never appeared. Most breakfast places are pretty good at making the rounds with the coffee pot for refills, but not Judy's. I finally flagged down a server and was able to get my one and only refill near the end of the meal.
