Bantam + Biddy
Shaun Doty cooked in Michelin-starred restaurants in France and Belgium and founded four restaurants. Everywhere he’s worked, he’s put together eco-friendly recipes drawing on local ingredients. At Bantam + Biddy, he joins Atlanta-area caterer Lance Gummere to bring his culinary prowess to rotisserie chicken and time-tested Southern sides. As in his past restaurants, he’s drawing on what he can get locally. Here, it is free-range pastured chickens, which he rotisserie cooks whole and serves with side dishes such as deviled eggs dusted with bourbon-smoked paprika or fries cooked in duck fat. Southern breakfast cooks all day, filling the restaurant with the sounds of sizzling bacon and bubbling grits.
