For the husband-and-wife team behind Fiesta Mambo, freshness is king. Every morning, they cook their Mexican cuisine from scratch, hand-frying chips, mixing sauces, and marinating meats. They also purchase fresh veggies several times a week at local markets to ensure maximum crispness. Even their cooking processes strive to stay natural; for example, they peel tomatoes with steam instead of chemicals or a microwave's built-in peeling laser.

Located on the Rose District's revitalized Main Street, the restaurant complements its handmade food with rustic brick-walled decor. A recently widened sidewalk made room for additional outdoor seating, and other renovations, both interior and exterior, have helped the restaurant keep pace with the transformation of the surrounding neighborhood.
