The Green Onion

In 1995, Erin Hunt began his first restaurant job washing dishes at Café Lafayette in Madison, Connecticut. Intrigued by the art of cooking and all the fires chefs are encouraged to start, he spent the next two years picking up tricks of the trade before enrolling in the famed Culinary Institute of America. After gigs in Chicago, Boston, Atlanta, and France—which included working at a two-Michelin-star restaurant under acclaimed French chef Roger Vergé—his culinary journey brought her back to Connecticut to be the executive chef at The Green Onion.

Here, Erin puts upscale twists on classic dishes, from pan-seared diver scallops accompanied by lobster cheesecake to duck breast paired with an apple, fennel, and sweet-potato hash. Each gorgeously plated meal can be accompanied with pours from The Green Onion's constantly evolving selection of wine and spirits.
