The flight’s parade of miniature waffles starts with the red velvet waffle topped in strawberry compote and moves on to the green tea waffle with its ginger Chantilly cream. Spicy cocoa powder and shaved dark chocolate distinguish the mexican chocolate waffle, before the tour de flavor ends in the café’s signature liege waffle. This specialty is made with pearl sugar, which caramelizes as the batter cooks. Of course, each of these waffles can arrive on its own—or stuffed with apple pie filling upon request. The menu doesn’t focus entirely on sugar, either. It also features waffles topped in pork shoulder and poached eggs, as well as chicken salad sandwiches on a choice of toast.
