Classes have around 12 people and include demonstrations and hands-on cooking. They may cover a range of specific topics. The three-hour introductory vegetarian cuisine teaches students how to make a range of Indian staples, including chai tea, chickpea curry, flatbread, and seasoned veggie rice. There is also a non-vegetarian introductory class where students make chicken curry and other meat-based dishes, along with an appetizers class that introduces chickpea-battered potatoes, samosas, tangy chaat dishes, spinach pakora and a range of other snacks. The 90-minute classes focus more closely on specific dishes, which may include paneer tikka masala, eggplant bhurta (a favorite streetside dish), pav bhaki (spiced vegetable sloppy joe), or saag paneer (spinach with cheese) with either rice or naan bread.
