Like many unemployed college graduates, Seattle resident Roberto Salmerón had a new degree and endless free time, according to the _Seattle Met_. So he did what any Mexico native with a bike would—he set out on the 1,600-mile trek to his hometown of Tijuana, biking toward the tacos of his childhood. Somewhere between the redwood forests and the beaches of SoCal, he figured out what his true calling would be: to bring authentic tacos within a reasonable biking distance. Today, his eatery, Tacos Chukís, is part of a growing population of authentic Mexican restaurants ensuring Seattleites can get a great bite in their own backyard.
