At Makai Poke Co., the chefs carry on this tradition, using as much local produce and fresh protein as they can get their hands on. On a base of rice, quinoa, or zucchini noodles, the chefs pile diced fish, stir in fruits and vegetables, and then finish the bowls off with tasty sauces. Customers can construct their dream bowl, or taste one of the chef's specialties, such as the So Cali bowl with shrimp, mango, and a sweet chili garlic sauce.
