Executive chef and manager Devin Walsh builds relationships with quality farms throughout Arizona and the West Coast to craft elegant dishes on Calistro’s limited Groupon menu with the freshest ingredients available. Steamed pumpkin dumplings introduce taste buds to Walsh’s world of flavors with light pumpkin mousse, braised red cabbage, and welcome pamphlets etched into crunchy walnuts. A second course of house, caesar, or greek salad cleanses palates before teeth sink into the tender bounty of grass-feed filet mignon drizzled with cabernet-tarragon jus. Hand-cut tagliatelle pasta winds through bobbing morsels of confit duck leg and baby spinach lily pads floating on a creamy ragout. Chefs sear the ahi tuna steak rare then ease flame-kissed fillets into a cool gazpacho of local vegetables with jicama rémoulade and warm grilled focaccia.
