At Capo's, Chef Tony Gemignani and his team serve Italian-American cuisine—or, more specifically, they serve Italian-Chicagoan cuisine. That means plenty of deep-dish pizzas—the crusts made with flour from one of Chicago's oldest mills—and italian beef sandwiches smothered in giardiniera. Cocktail you can't just get one of: the potent blend of cognac, Cointreau, prosecco, and angostura bitters called, unsurprisingly, the Chicago cocktail. Every order earns you a wooden token from an antique cash register, which you can use for $1 off your next Chicago cocktail or wear as a tiny hat.
Italian version of deep dish: the Quattro Forni. Translating to four ovens, this dish is an appetizer-sized square pizza cooked four different times in four different ovens. It takes so long to prepare, they only serve 10 per day.
Best monuments to the mob: the four spacious booths, each upholstered in red tufted leather and named for an infamous Chicago mobster. The Al Capone booth is really more like a mini-museum, as it's decorated with paraphernalia such as poker chips from the spot where Capone used to gamble.
